Amlou is a traditional Berber specialty from Morocco, prepared for centuries in the Souss region. What is amlou?
Amlou is the traditional spread of south-west Morocco: toasted almonds ground down, bound with food-grade argan oil and sweetened with honey. Nothing else. It is a Berber celebration food, served at breakfast and to welcome guests.
Its texture is not that of an industrial spread: it is looser, slightly grainy, and the layer of oil that rises to the surface at rest is normal — just stir it back in.
Three ingredients, nothing more
Toasted almonds, cold-pressed food-grade argan oil, honey. No palm oil, no milk powder, no emulsifier, no added sugar beyond the honey.
That is what explains the gap in taste with a conventional spread: amlou is less sweet, richer, and the almond clearly dominates.
How to eat amlou
Most simply: by the spoonful, on fresh bread or warm msemen, at breakfast. It also works as a topping on plain yoghurt, porridge, crêpes or pancakes.
In cooking, a spoonful of amlou in a vinaigrette or a sauce for poultry brings an unexpected depth of toasted almond. Store the jar at room temperature, away from light.

Does amlou contain palm oil or added sugar?
No. Our amlou contains three ingredients only: toasted almonds, food-grade argan oil and honey. Honey is the sole sweetener.
Why does oil rise to the top of the jar?
It is the sign of a product with no emulsifier. Separation is natural in a paste made of almonds and oil. Stir with a spoon before each use.
How should amlou be stored?
At room temperature, away from light, with the jar closed. Avoid the fridge: cold sets it and makes it hard to spread. Once opened, use within three months for best results.
Is amlou suitable if you have a nut allergy?
No. Amlou is made from almonds and is not suitable for people with a tree-nut allergy. It also contains honey, which is not recommended for children under one year old.
